These bars remind me of "no bake cookies." They are delicious plain, or you can jazz them up by adding in nuts, seeds, raisins, etc. I personally like the plain the best, but others that tried them liked the crunch of adding in pistachios & cacao nibs. I've made them both ways and they are both delicious. I also make my own raw chocolate, so that's what I used in my bars. These are addicting so beware!
Here's the recipe:
1/4 cup coconut nectar
1/4 cup almond butter
1/4 cup tahini
1/4 cup coconut oil
1/2 cup + 1/8 cup your favorite chocolate (I made my own raw chocolate and used that)
1 cup regular oats
1/2 cup unsweetened coconut shreds
1/2T bee pollen
1/2 cup combined seeds, cacao nibs, nuts, raisins, etc. (opt)
In a double boiler over low temperature, melt coconut nectar, almond butter, tahini, coconut oil & your chocolate until melted.
Add in the rest of your ingredients and mix well. Transfer to a pan (I used a 2 3/4 quart glass pan) and chill in the refrigerator for an hour or so and then cut into bars. Place back in the refrigerator until completely firm. These should last a couple of weeks. Mine never last that long, so it's hard to tell exactly how long they will last!
