Hey there everyone. I have finally gotten a nice quiet weekend to work on some things.  And one of them has been trying to find a protein ball recipe that tastes good but also has a good texture. Most just seem too gritty or they don’t hold together very well. I tried one with protein powder in it and I didn’t like the taste at all. Protein balls work really well for me, as I can take them to work for snacks or pop one before a workout.  I added figs to this one, so they are kind of a fig newton protein ball.

Recipe:

1 cup rolled oats

1 cup almond meal (or flour)

3 tablespoons flax meal

3 tablespoons chia seeds

½ to 1 tablespoon cinnamon

Pinch of salt

1 tablespoon coconut crystals (or equivalent in another sugar form)

½ cup medjool dates

½ cup black mission figs

Warm water for soaking

Soak the dates and figs in warm water for a few minutes. In a food processor, grind the oats and almond meal together and then add all the other dry ingredients. Mix well. Add the dates and figs and process. While processing, add soaking water tablespoon by tablespoon until the dough forms a ball. I then take the mixture out of the processor and add any additional ingredients I have on hand, usually raisins and cashews. You can add anything you want. I just massage all the ingredients into the dough mixture and roll the dough into balls.  You could roll the balls in shredded coconut or cocoa powder if you want to.  I would let them sit in the fridge overnight so the chia seeds can absorb some moisture. These should last about a week in the fridge. 

I usually eat one or two protein balls with a piece of fruit for my snacks and I’m full for a couple of hours until dinner time.  I’ll probably keep tweaking my recipe (I love to experiment).
