    Brownie Ingredients:

  • 1 Cup raw walnuts
  • 1 Cup dates
  • 1/4 Cup cacao powder
  • 1/2-1t Vanilla
  • dash of sea salt

   Cashew Cream Ingredients:

  • 1 Cup raw cashews (soaked if you want a creamier frosting, at least 2 hours)
  • 1 Cup unsweetened almond milk or other non - dairy milk such as hemp
  • 1/2 Cup dates
  • 1/2-1t vanilla
  • dash of sea salt


Blend up walnuts in food processor to make coarse crumbs. Add in the dates, cacao powder, sea salt, and vanilla Blend until mixture begins to sticks together. Press firmly into small glass dish. Directions for cashew cream frosting. Blend up cashews and non-dairy milk in your high speed blender. Add in the dates, sea salt and vanilla extract. Blend well until very smooth. Spread cashew cream layer over brownies. Freeze until firm (several hours). These are delicious right out of the freezer because they don't freeze rock hard.In fact, the icing tastes a lot like ice cream! Brownies and ice cream; it can't get much better than that!
