  • 2 large portobello mushrooms
  • Red pepper
  • Red onion
  • Zucchini
  • Eggplant
  • Broccoli

Add your favorite vegetables but make sure they will absorb the marinade well.


  • 2 cloves garlic, minced
  • 1/4 cup tamari,
  • 1/4 cup olive oil
  • 1T apple cider vinegar
  • 1-2T chili powder
  • 1t cumin
  • 1/4t cayenne pepper

Cut up your vegetables in strips. Blend marinade ingredients together and pour over your vegetables. Let marinade for several hours.  You can use lettuce wraps, Swiss chard, collards, or regular wraps for a great fiesta! Top with your sour cream, guacamole, and cheese sauce.

Soy Sauce, Tamari, Nama Shoyu substitute:

  • 1 large portobello mushroom
  • 1T sea salt
  • 2 cups water

Place mushroom, sea salt and about 1/2 cup water in blender. Blend on high speed for a few seconds. Add rest of water and blend well. Strain and place in your container. Will keep for several weeks in your refrigerator.
