Hey everybody, Kristy here again!  Well, it is scorching here in Nebraska this week.  The heat index tomorrow is supposed to be 106 degrees.  What better way to beat the heat then with some crazy easy ice cream?  I wanted to do something kind of tropical, so I combined some frozen bananas, pineapple and coconut extract to make a pina colada ice cream.  This ice cream is made in a food processor but you could do it in a blender (probably with some added liquid).  If you don’t have any coconut extract, the ice cream still tastes great, or if you have some high quality coconut cream, you could use that as well.  Here’s the recipe: Serves 2


2 frozen bananas, sliced

1 cup pineapple (fresh or frozen)

1t coconut extract

Combine the bananas and pineapple in the food processor and puree until smooth.  Drizzle in the extract and blend until incorporated.


There are unlimited possibilities.  I love cocoa with almond butter.  Frozen mango and bananas would be awesome as well. Also, if you don't want to eat it soft served, throw it in the freezer for a little bit to harden up to where it's more like ice cream.
