I remember the days when I used to say that I couldn't live without cheese! That was my excuse when I felt convicted to eat a vegan diet. I was vegetarian, but many times I would feel that dairy wasn't doing me any good. It wasn't until the big C word (cancer) was delivered to me personally, that I made a decision. That day was a turning point for me as I didn't care whether I could live without it or not. Being and staying alive was far more important to me. There were no longer any excuses. I have never looked back and now it's been over seven years since I've had dairy in my diet. I haven't missed cheese at all, and I think it's because I've found some fabulous raw recipes that are quite satisfying. This is one of them; a raw cheese sauce that I use in many different ways. I saw it on line a few years ago and I have made it to suit me. You can use this cheese sauce alone for dipping vegetables, crackers, chips, etc., or you can use it in any recipe. I use it a lot with my steamed vegetables. It makes eating vegetables a great and delicious meal. I don't usually need anything else to eat with it.

This recipe tastes almost identical to a cooked version Kristy & I used to make. It used pimentos for the color and arrowroot to thicken it up. This recipe is so much easier, and tastes just as great. You just throw everything in the blender and blend until smooth and creamy. I usually put a jalapeno in mine to spice it up, but if you aren't into spicy, leave it out. The amount of water will depend on your blender and how thick or thin you're wanting it to be. This sauce does thicken up in the refrigerator, so you may have to thin it out some when you use it again. If you're using it for a dip right away, then you'll use less water. I like mine a little thinner so I use about 1/4 cup of water.



  • 1 cup cashews
  • 1 large red pepper
  • 3T nutritional yeast
  • 1T tahini (I've used regular & black and both are great) 
  • 2t onion powder
  • 1 1/4t sea salt
  • 1/4t cayenne pepper
  • 1 jalapeno (opt) 
  • 1 large clove garlic
  • 2T fresh lemon juice
  • pinch turmeric
  • 1/4 cup water, more or less depending on how thick or thin you want it

Blend all ingredients in a high speed blender until smooth & creamy.  Great with fresh vegetables & crackers. Enjoy!
