It's hard to believe that summer is almost over! We've had such a busy summer with moving, new jobs, and just life in general. I've had to ask myself, "Where did the summer go?"

Now that Kristy and I are training for the half marathon in November and I'm working full time, I'm always looking for easy snacks and meals to fix so life doesn't have to be too complicated. This recipe is super easy and delicious. You can make these as bars or cookies. No dehydration necessary; just the refrigerator! I make my own chocolate chips but you can use your favorite chips for this recipe. Make sure to store them in the refrigerator.

Chocolate Chip Cookie Bars

Makes an 8x8 pan


1 1/2 cups regular oats

1 cup cashews

1/2t sea salt

1/2 cup coconut sugar

1/2 cup coconut oil

2T water

2t vanilla

2T psyllium husks (opt)


Non dairy chocolate chips


Process the oats and cashews in a food processor until like flour. Add in salt, sugar, vanilla, water and coconut oil. Process until crumbly. Slowly process in psyllium husks if using. Then slowly process in walnuts and chocolate chips. You just want to mix them in, not blend them. Transfer dough to an 8x8 pan and spread dough evenly. I like to stick the bars in the freezer for about 10 minutes then cut them into bars. Store in refrigerator.
