We've always been a fan of chocolate chip cookies. Who isn't? So when we started eating a lot healthier, we had to find ways to make some of our favorite foods without all the bad ingredients. These chocolate chip cookies are simple, yet very tasty. We used a dehydrator, but you could easily use a warm oven to bake these and then store them in the refrigerator. If you like cookie dough, you might just try them as a no bake cookie and put them straight into the refrigerator. Anyway you make them, they will surely be a big hit!

Chocolate Chip Cookies

Makes about a dozen

Dry Ingredients

1 cup almond flour

3/4 cup oats

2T psyllium husks

1/4 cup unsweetened coconut shreds

1/4t baking soda

1t vanilla (we used powdered)

1/4t sea salt

Wet Ingredients

1/4 cup raw honey

1/4 cup raw cashew butter

1/4 cup melted coconut oil

Dairy free chocolate chips

pecans or nuts of choice if you like some crunch to your cookie

Directions

In a food processor, process almond flour and oats until the oats are more like a flour. Add in dry ingredients and mix well. Next, add in honey and cashew butter (vanilla if using liquid) and mix well. Last, add coconut oil and process until everything comes together into a cookie dough. Transfer to a mixing bowl and add in chocolate chips and any nuts you may like. You can transfer dough onto a mesh tray lined with parchment paper and make into cookies. Dehydrate at 145 degrees for one hour and turn down temperature to 115 degrees for several hours. Turn off dehydrator and let the cookies sit for awhile as they will seem very soft. Once they harden enough to transfer to a container, place in refrigerator where they will harden up.  You can probably bake these at a warm temperature in the oven but watch carefully so you don't burn them. If you like cookie dough, you can make these as a no bake cookie and transfer straight to the refrigerator. Make sure to store cookies in the refrigerator.
