Looking for something light and fresh to take on picnics or to share with friends? Give this a try: crisp zucchini mixed with the light flavors of edamame and creamy avocados, with loads of fresh basil to round it all out. The Recipe:

  • 3-4 zucchinis, diced
  • 2-3 avocados
  • 1 cup edamame, shelled (organic if possible)
  • 1/2 cup basil, julienned
  • Juice of half a lemon
  • 2-3 sprigs thyme
  • Drizzle of olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Dice zucchinis (if using organic you can leave the skin on). I prefer smaller pieces in this salad.  Add edamame and diced avocados.  Place basil and thyme in as well.  Add lemon juice, drizzle of olive oil, and honey.  Stir and then season as needed with salt and pepper.

It needs to sit for about ten minutes and it actually gets better the more it is stirred.
