Since it's detox month, here's a fruit soup that would be great coming off of a juice fast, or just adding it in with your juices or other detox foods. Now that it's about summer time, this is a great tasting soup you can take to cook outs or picnics! It's cool, refreshing, and tasty!

Pina Colada Cream:

  • 1 frozen banana
  • 1 cup fresh or frozen pineapple
  • 1/4 cup shredded coconut
  • 1/2 cup coconut milk

Blend all ingredients in blender until smooth. This will be more than you'll need for the fruit soup unless you double the soup recipe! Just use the rest as a smoothie.

Soup Base:

  • 1 mango, peeled and cut
  • 5 strawberries, sliced
  • 1/4 cup chopped cucumber
  • 1/16 cup chopped onion
  • 1/8 cup chopped cilantro
  • 1/2-1t orange extract
  • 1t raw honey (more if you like it sweeter)
  • 1/2 lime, juiced
  • 1/4t sea salt

Mix all ingredients together in bowl. Drizzle olive oil over top. Take half of the fruit soup and place in blender. Blend until smooth. Add to the soup in the bowl. Add in your pina colada cream (1/2 cup or more if desired). Mix. Top with shredded coconut and diced strawberries. Best chilled for 1-3 hours or more.
