This is a great salad you could make for the holidays. I love the cranberries, apples, and walnuts mixed in with the kale and a great dressing. Super simple to make, but you'll want to eat this the same day. If you have trouble with raw kale, you probably could substitute some other greens. We used the curly kale and softened it by massaging in some lemon juice. Kristy suggested rubbing orange juice into the kale which would be really good in this recipe. The dressing is fabulous and could be used in other foods. Try it. You'll like it!


Serves 2

2 cups kale

1/2 apple, diced

1/2 stalk celery, diced

2T walnuts

1T sunflower seeds

2T dried cranberries

1t black sesame seeds (opt) We're still doing our experiment with reversing gray hair!

Mix all ingredients in a mixing bowl.


This will make more than what you'll need for the salad unless you double the salad ingredients.

4T unsweetened applesauce (we used our own pear/applesauce)

4T walnuts

4T raisins

1T coconut vinegar or raw apple cider vinegar

2T raw mustard or whatever kind you use

6T water

pinch of sea salt

Blend all ingredients and pour over salad. We found if you serve the salad on a longer plate as shown in the picture, it's easier to keep all the ingredients mixed together instead of them going to the bottom of the bowl. Plus it looks nicer!
