Sometimes I just like to have a quick appetizer to eat. These pizza bites fill that need and are quick and easy. I used a dehydrator for mine but you could probably bake these in a warm oven set at it's lowest temperature. They didn't take too long in the dehydrator so I would imagine they'd be done pretty quickly in the oven. Just make sure to check them frequently as you don't want these to get too done; even in the dehydrator.
These pizza bites are great dipped in a marinara sauce or like I shared in the video, mixed in with a zucchini pasta dish. Very tasty! This recipe could easily be doubled, but I always experiment with less first until I've tried it. Also, feel free to experiment with your favorite seasonings. What we used here, makes these bites super tasty! Even when we took them out of the processor we could smell how delicious they were going to be. Enjoy!
Makes about 6 bites
2T hemp seeds
1/4c + 2T nutritional yeast
1/4c +1/8 cup sun-dried tomatoes (soaked until soft) Save soak water
2T psyllium husks
pinch of sea salt
pinch red pepper flakes
1/2t garlic powder
1/2t onion powder
1T or so of the soak water (if needed)
additional hemp seeds for coating
Process walnuts, pecans, and hemp seeds until crumbly. Add in nutritional yeast, psyllium, spices, and sun-dried tomatoes. Process until it all comes together. Add some soak water if needed. Transfer to a mixing bowl and roll into bites. I like to roll the bites in hemp seeds or you can use something else if you like. Place on a mesh tray and place in dehydrator. Dehydrate at 145 for one hour and then turn down the temperature to 115 degrees. These only took a few hours to get done. . If you don't have a dehydrator, you can try dehydrating them in the oven. Just set the temperature to its lowest, put the rack on top, and keep the door ajar. These probably won't take too long so keep checking them. Enjoy them dipped in some marinara sauce or use in a zucchini pasta dish. Either way, they are very tasty!
