This is a trail mix I love to make quite often. It's not only really good and nutritious but super easy to make (my favorite).  I actually love to eat this before work and it keeps me all morning until lunch. It's quite filling so you don't have to eat a whole lot of it at once.

Trail Mix (Vegan)

Ingredients

Dry:

2 cups regular rolled oats

1/2 cup pumpkin seeds

1/2 cup sliced almonds

1 cup dried fruit (we used cranberries, raisins, & white mulberries)

1-2t vanilla (we used powdered)

1t cinnamon

1/2t sea salt

Wet:

1/4 cup pure maple syrup

2T oil (we used chia oil)

2T raw cashew butter, room temperature

chocolate chips, opt. (We like to use the 65% cacao chips. You can make your own to keep it raw)

Instructions

Mix cashew butter, maple syrup and oil together until well blended. If using vanilla extract you can blend with wet ingredients. Set aside. Place dry ingredients in large mixing bowl and mix. Add wet ingredients to your dry ingredients and mix well. If you want to add some chocolate chips, you can add a few here but I add most of mine after it is dehydrated. Place trail mix on two mesh dehydrator sheets and dehydrate at 145 degrees for one hour. Turn temperature down to 115 degrees for several hours until it is somewhat crunchy. It just depends on how crunchy you like it. I dehydrate mine for about 13 hours. If you want to add some more chocolate chips, add them in after it is dry and then store in a glass container.
