Serves 3-4

1 cup cashews
1 cup non dairy milk (coconut milk would be really good with this. We used our home made hemp milk)
1 cup strawberries (reserve 1/4 cup or more to add in later)
1T lecithin
4T coconut nectar
1 1/2t vanilla
1/4t sea salt

Add all ingredients to blender (except for reserved strawberries). Blend until smooth and creamy. Transfer to ice cream maker and process until done. Transfer to bowl and add in reserved chopped strawberries. Place in freezer until ready to eat and store leftovers in freezer.
